I am a newbie too but I have flashed my phone more than 100 times I guess, keep trying on XDA developers' custom ROM (because they are way better than SAMSUNG stock rom) I think there is no such ROM as most stable or appropriate here, every ROM has its own feature(some might be laggy or buggy though) so the best way to find out which 1 most suit your needs is to test them out.
